Covington council OKs food truck

COVINGTON, Ind. — City council members heard Monday from the Taco Chicas. Connie Cox and Melissa Allison would like to bring their Taco Chicas lunch truck to Covington on Thursdays each week.

Since January, the Taco Chicas have been serving Mexican food in Attica, Ind., on Thursdays and Fridays and in Williamsport, Ind., on Wednesdays.

Cox said they are health board approved and have all the necessary licenses. The council didn’t have any problem with the Taco Chicas setting up their business on Thursdays and said they could use the city’s vacant lot on Fourth Street by Dollar General. Cox said Old National already had given them permission to use their parking lot.

In other business, city council members:

Learned from water superintendent Greg Myers that the main lift station at the sewer plant has been having problems regularly. Myers said the main lift station was installed in 1975 and has a complicated design. Myers said he has already begun getting estimates and looking into possible grants for the future replacement of the lift station.

Heard from fire chief Joe Whitaker about an elected officials workshop 2-4 p.m. March 26 at the fire station in Covington. The workshop sponsored by Fountain County Emergency Management will be led a by a Homeland Security representative to discuss the responsibilities of elected officials prior to and after a disaster. Whitaker added that “it should be an interesting two to three hour meeting.”

Council members will meet next on April 1.
